Comfort Food: Cheesy Grits & Eggs
I was sicker than a dog this
weekend. Cold sweats, couldn’t
sleep, Linda Blair sick. You know
I’m really, really, really sick
when I can’t eat. One thing I can
always eat–eggs. When I can’t
even eat eggs, sprinkle me with
holy water because something is
terribly wrong.
My all time favorite flu cure and
hangover remedy, or "sick slop"
as my roommate used to call it, is cheesy grits-N-eggs.
Mountain People Cheesy Grits-N-Eggs
1/2 cup grits, polenta if you mst
4 eggs
1/2 cup grated cheese, fancy if you need it
A big splash of milk or cream
S & P
Boil 1 1/2 cups of water; then add grits.
Switch to low heat, cover and leave for 20 minutes.
Beat eggs and dairy and add to grits with salt and pepper.
Stir over low heat until eggs are cooked and cheese is melted.
Makes 2 big bowl fulls.
