Bar-B-Que Sauce: Kansas City Style

Our friend Liz keeps us well-stocked with her father’s bar-b-que sauces–Jack’s Bar-B-Que of Nashville, Tennessee fame to be exact. I love the original, tangy vinegar-based sauce. But my favorite by far, hands down, brisquet to chicken to ribs is the Kansas City style. This is a dark, smoky, molasses dominated sauce, and it is perfect.

Always one to eat my ass off yearly at Rib Fest in Chicago,
I’ve stalked many a cocky saucier that claimed they made
the best Kansas City style sauce, only to gnaw at rib tips
that would have been better dowsed in Sweet Baby Ray’s.
But this bar-b-que sauce is a special balance of sweet on
top of earthy, dense, spicy thick goodness, with a hint of
sour.

I know, I know, the whole BBQ culture is annoying..but
bar-b-que has its time and its place. And it is summer. You
can order any of Jack’s Bar-B-Que sauces by clicking www.jacksbarbque.com.
