Pisco Doesn’t Always Have To Be So Sour

The Pisco Sour is one drink that comes and goes and almost has its day in the sun… Why do people like it so much? It’s the egg white, stupid.

Some where back in the 80’s bartenders stopped using egg whites in their sours, but they had bigger problem with the pre-made bottles of sour mix that populated most wells. Fresh is now king, and lemon and lime juice in a sour is a right, not a treat. And not to ruin the South AMerican romance, but a whiskey sour is every bit as magical as a pisco sour, if you don’t hold the froth.
